Caoru’s meats

Casines veals 22 months and older:

 

Like most traditional, hardy, mountain breeds, they produce a tasty, fatty meat, high in trace elements and with exaggerated nutritional values, both due to the breed and to the diet of their first 8 months of life based on grass milk, followed by a ration of grass, both the one they graze on in the meadows and sheepfolds, and the one we cut in the valley meadows and which they feed on in winter, to finish with a few final months of stabling where they are fattened and given the final touch of fat and tenderness to the meat with local flours.

The Limousin provides everything that the Casin lacks and vice versa, resulting in a well-rounded product, both in size and tenderness, with the right balance of interlaced fats and the lean cuts that are more typical of pure Limousin. The breeding method does not change at all: 8 months of suckling and pecking grass with their mothers, to finish them in a minimum of three months of stabling where they are fed grass cut by ourselves and local flours until they reach their optimum point at around 14 months.

Traditional livestock farming, sustainable prices:

 

Our small livestock farm, by using exclusively traditional production methods, is intrinsically linked to nature. This allows us in “good” years, such as 2022, to adjust the price of our products downwards, reinforcing our commitment to fair prices both at origin and destination.

 

And how can that be?

  For us, a good year is not always what we all have in mind: sunshine and a mild climate. In Caoru, a good year is one with abundant rainfall at the right time, with temperatures that are not excessively hot, allowing high-altitude grasses to grow abundantly, and without extreme cold that makes our animals “burn” their reserves to resist it.  

  Thus, the Casines have abundant grass during the dry season in the mountain passes of the Picos de Europa that surround us. And thanks to this summer of abundance, the animals return “home” in good shape and size, without having lost weight in their search for food when pastures are scarce.  

  On the other hand, these same rains have allowed us to collect a large amount of grass to prepare fodder for the days of less abundance. Thus, when the Casines return to their usual autumn-winter pastures, we do not need more food for them than what we have collected ourselves. A great saving both economically and in sustainability since all their food is km 0!  

 

So if we save, you do too.

  We adjust prices downwards if costs go down. Because to maintain our traditional livestock farming, your contribution by purchasing our products is essential.

Discover our products:

 

We are a traditional livestock farm, so to speak, and therefore only a few animals are put up for sale each year. Furthermore, the product is subject to a certain seasonality. We usually have more animals available in March, and we rarely have any ready for sale in August. Contact us to find out where and when to find our products!
